Last night, I got home from a week of vacation with the family in New York City and upstate New York... and I just want to be back at the lake with my people!
The week was full of good food, fun times, and, well, bats! We stayed at an adorable airbnb in quaint town right off Keuka Lake, with one downside - they had a bit of a bat problem. We found bats in the sink, on the floor, and could hear them chirping away in a locked closet that led to the attic. As terrifying and upsetting as it was, we couldn't help but laugh about it all! Some good snapchats were definitely made... and this pattern is inspired by our little housemates.

Nightshade Free Taco Meat
Nightshade-Free Taco Meat (GF, DF, Paleo, NF)
serves 4
1 Tbsp salt
½ Tbsp garlic granules or powder
1 Tbsp cumin
1 Tbsp coriander
1 Tbsp dried cilantro
1 Tbsp oregano
1 tsp black pepper (if desired)
1 tsp oil of choice
1 medium yellow onion, diced
2 lb ground beef (or ground turkey, see note)
In a small bowl, combine dried spices.
Heat oil in a large saucepan over medium heat. Add onions and cook until they are tender and start to brown and caramelize. Add ground meat and cook until browned and well cooked.
Sprinkle seasoning evenly over top of the meat and stir until well combined. Let cook for 5-10 minutes so spices have a chance to meld. Taste and add salt if needed.
Serve with tacos, taco salad, burritos, nachos or whatever your heart desires!
NOTE: If you want to use ground turkey instead, use a mix of 1 lb dark meat and 1 lb light meat.
